Black Bean Tacos with Quick Slaw

Method

    Warm the beans in a small saucepan with 1 tablespoon olive oil, cumin, paprika, and a pinch of salt. Mash slightly with a fork.

    Toss the cabbage with lime juice, cilantro, the remaining oil, and a pinch of salt.

    Char the tortillas directly over a gas flame or in a dry pan for 20 seconds per side.

    Build each taco: beans, slaw, a slice of avocado, and an extra squeeze of lime.
