Sheet-Pan Chicken & Sweet Potato

One pan, one timer, dinner. Smoky paprika chicken next to caramelized sweet potatoes and red onion.

Method

    Heat the oven to 425°F (220°C).

    Toss the sweet potatoes and onion with 2 tablespoons olive oil, salt, and pepper. Spread on a sheet pan and roast for 10 minutes.

    Meanwhile, rub the chicken with the remaining oil, paprika, garlic powder, salt, and pepper.

    Pull the pan out, push the vegetables aside, and nestle the chicken skin-side up. Return to the oven for 22–25 minutes until the chicken hits 175°F at the bone.

    Rest 5 minutes before serving.
